In a stand mixer fitted with a kneading hook, knead the flour, milk, butter, caster sugar, and one egg;
When the dough begins to be set, add the vanilla extract and the dried yeast; knead;
Dust your working area with flour and place the dough; as the dough tends to be sticky, dust your hands to shape it;
Shape the dough into a ball;
Leave the dough to rest for one hour, covered with a dry clean cloth;
Flatten the dough ball into a disc, making a hole in the center; put on a baking tray;
With a spoon, mix one egg yolk with 2 tablespoons of milk; brush the dough with the mixture; sprinkle with pearl sugar;
Do not preheat the oven; place the dough into the oven, and start heating to 180°C; bake 25-30 minutes beginning timer when the oven has reached 180°C;Leave the brioche to cool down;
Vanilla Filling
Cut in halves the vanilla pod;
In a saucepan, slowly heat the milk with the vanilla pod; take out of the stove and leave to infuse;remove the pod and scrape the vanilla grains from the pods into the milk;
In a large bowl, add the sugar and the egg yolks;
Whisk;
Continue to whisk until the mixture is whitening;
Out of the stove, whisk the mixture into the milk;
Slowly heat until it thickens; stop heating;
Cream the butter;
Continue to beat the butter and add gradually the milk and vanilla mixture; beating well after each addition;
Leave it to cool down and well chill in the fridge;
Whip the cream;
Carefully combine the mixture with the whipped cream;
Leave it to chill;
Horizontally slice the brioche in halves;
Don't forget to put the king's bean!
Fill the brioche with the vanilla cream; spread or use a piping bag;
Chill in the fridge before placing the top;
