In a large saucepan, boil lightly salted water and blanch the savoy cabbage for 3 minutes;
Add in the green cabbage and continue to blanch for 5 minutes;
Drain well;
In a large bowl, whisk one egg; season with ground pepper;
Add the cabbages, the herbs, and the minced shallot;
Combine well;
Preheat the oven at 180°C
In a frying pan, heat a tablespoon of olive oil and shape two rostis; I used stainless cookie cutters to obtain a perfectly-round rosti;
In an oven-proof dish, simply place the skate wing (dark skin side downward); season with ground pepper, thyme, and lime slices; pour a dash of lime juice;Put some cherry tomatoes on the branch next to it.Bake for 15-20 minutes;
When the rosti begins to set, remove the cookie cutter and turn upside down; Cook on low heat until lightly golden;
Remove the fish skin;Arrange rosti and skate wing on a plate;Enjoy!I simply roasted some asparagus tips to accompany;
