Instructions
Wash the zucchini; slice into 5-6mm thick (1/4-inch);
Place slices onto a baking tray; brush with olive oil; sprinkle lightly with raw salt;
Put in the oven; bake for 10-15 minutes;
Finely chop the shallot;
Finely chop
(or tear up)
the dill;
When the zucchini has sweated well and become translucent, turn upside down and continue to bake for 10 minutes;
Slice the salmon into even pieces of 5-6mm thick (1/4-inch);
Preheat the oven, 210°C (410°F, 6);
Fold the edges of the puff pastry inward and pinch to raise a 1cm (3/8-inch) edge;
I choose individual puff pastry square; do the same for a bigger one to share;
In a bowl, whisk an egg;
Beat in the fresh cream; add in the herbs;
Brush the puff pastry with some of the egg mixture;
Bake for 10 minutes until the puff pastry has risen;
Turn down the oven temperature to 180°C;
With the edge of a tablespoon, mark the puff pastry along the inside edge; then push down the puff pastry center;
Spoon onto the pastry the rest of the egg mixture;
Arrange the zucchini and the salmon; be imaginative!
Sprinkle with grated cheese, shallot, and aromatics herbs; season lightly with ground pepper;
Bake for 15-20 minutes until well golden;
Enjoy!
