Instructions
Peel and dice the potatoes, the tomatoes and the onion;
Mince the herbs;
In a frying pan, heat a tablespoon of olive oil and quickly roast the potato dices;
Reduce heat and add the onion; let it gently sweat for 15/20 minutes;
Add the tomato dices;
In a bowl, whisk the eggs; season with salt and pepper;
Pour the eggs in the frying pan; add the herbs;
Continue to heat until eggs begin to set;
Slide the frittata from the frying pan onto a baking tray (You can use a greaseproof baking paper);
Bake for 10/15 minutes until lightly grilled;
