Ingredients

  • 250 g Potatoes
  • 2 Tomatoes
  • 3 slices Raw Ham
  • 50 gr Grated Cheese
  • 3 Eggs
  • 1 Red Onion
  • Parsley
  • Chives
  • 1 tbsp Olive Oil
  • Pepper & Salt

Instructions

  • Peel and dice the potatoes, the tomatoes and the onion;
    Mince the herbs;
  • In a frying pan, heat a tablespoon of olive oil and quickly roast the potato dices;
  • Reduce heat and add the onion; let it gently sweat for 15/20 minutes;
  • Add the tomato dices;
  • In a bowl, whisk the eggs; season with salt and pepper;
  • Pour the eggs in the frying pan; add the herbs;
  • Continue to heat until eggs begin to set;
  • Slide the frittata from the frying pan onto a baking tray (You can use a greaseproof baking paper);
  • Bake for 10/15 minutes until lightly grilled;
  • Enjoy!
