Ingredients

  • 220 g Salmon
  • 350 g Zucchini
  • 240 g Puff pastry
  • 1 Shallot
  • 80 g Fresh cream
  • 40 g Grated cheese
  • 2 tbsp Dill finely chopped
  • Ground pepper
  • 2 pinch Salt
  • 1 tbsp Extra virgin olive oil

Instructions

  • Wash the zucchini; slice into 5-6mm thick (1/4-inch);
  • Place slices onto a baking tray; brush with olive oil; sprinkle lightly with raw salt;
    Put in the oven; bake for 10-15 minutes;
  • Finely chop the shallot;
  • Finely chop (or tear up) the dill;
  • When the zucchini has sweated well and become translucent, turn upside down and continue to bake for 10 minutes;
  • Slice the salmon into even pieces of 5-6mm thick (1/4-inch);
  • Preheat the oven, 210°C (410°F, 6);
  • Fold the edges of the puff pastry inward and pinch to raise a 1cm (3/8-inch) edge;
  • I choose individual puff pastry square; do the same for a bigger one to share;
  • In a bowl, whisk an egg;
  • Beat in the fresh cream; add in the herbs;
  • Brush the puff pastry with some of the egg mixture;
  • Bake for 10 minutes until the puff pastry has risen;
    Turn down the oven temperature to 180°C;
  • With the edge of a tablespoon, mark the puff pastry along the inside edge; then push down the puff pastry center;
  • Spoon onto the pastry the rest of the egg mixture;
    Arrange the zucchini and the salmon; be imaginative!
  • Sprinkle with grated cheese, shallot, and aromatics herbs; season lightly with ground pepper;
  • Bake for 15-20 minutes until well golden;
    Enjoy!
