Use a stand mixer with a dough hook if you have one; knead by hand otherwise;
Pour the warm water into the bowl and stir in the yeast;
With a sieve (you can use a colander), sift the flour over the water and the yeast;
Add the salt and the sugar;
Knead the dough in the stand mixer with a dough hook or do it manually; Don't forget to dust your hands with flour to knead the dough! Use the lowest speed on your food processor;
Knead for 10-15 minutes, until the dough is touch dry; pressing a finger should not be sticky and should not spring back;
Dust a wood board, or your clean kitchen counter, with flour; shape gently a ball with the dough;
Cover the dough with a clean kitchen cloth; leave the dough to rest;
Once the dough has risen well, knock back the dough;
Cut it and shape 3 small balls;
Roll out the dough;
