Instructions
Chop the chocolate into chunks; Separate the big chunks from the rest;
In a stand mixer bowl, ideally fitted with a flex edge beater head, cream the butter and the sugars until creamy;
Add the egg, the yolk, and the vanilla extract; beat well;
Add the flour and the salt; continue to stir until well combined;
Refrigerate for 15-20 minutes;
Preheat the oven, 170-180°C
Onto a baking tray, drop tablespoons of the cookie dough: Be sure to leave room for spreading while baking;
Bake for 10-12 minutes until softly golden;
Cool for 2 minutes on the baking tray;
Finally, cool on a cooling grid;
Enjoy!
