Ingredients

Soup:

  • 250 gr Red lentils
  • 1 carrot
  • 1 shallot
  • 50 gr sour cream
  • chives
  • parsley
  • 1 bay leaf
  • 1 tbsp olive oil

Skewers:

  • 1 chicken breast fillet
  • sesame seeds
  • 2 tbsp soy sauce

Topping:

  • pumpkin seeds
  • pines nuts
  • chives

Instructions

Red Lentils Soup

  • Chop the shallot and dice the carrot;
  • In a saucepan, heat a tablespoon of olive oil. Add the shallot and stir until the shallot becomes translucent;
  • Add the carrot and stir for 2 minutes;
  • Pour 500 cl of water and the red lentils;
    Stir and let it simmer for 20 minutes;
  • Add the bay leaf for 5 minutes;
    Take the bay leaf off the saucepan, and add chives and parsley;
    Add the sour cream;
    Blend the soup until smooth in a blender or with an immersion blender;

Chicken Skewers

  • Cut the chicken breast fillet into medium size pieces of meat;
    Set the chicken pieces on wood skewers;
  • Coat the chicken with sesame seeds;
  • Broil the chicken skewers in a frying pan, cook on each side for 7 minutes at medium heat;
    Pour two tablespoons of soy sauce and continue to cook until glazed;

Topping Bowl or Plate

  • Pour a ladle or more of soup, a dash of sour cream, scattered with the pine nuts and the pumpkin seeds;
    Scattered with some chives;
    Enjoy!
