Ingredients
- 180 g Butter
- 75 g Caster Sugar
- 110 g Brown Raw Sugar
- 1 tbsp Vanilla Extract
- 1 Egg
- 1 Egg Yolk
- 250 g Self Rising Flour
- 1 pinch Salt
- 75 g Milk Chocolate
- 75 g Dark Chocolate
Instructions
- Chop the chocolate into chunks; Separate the big chunks from the rest;
- In a stand mixer bowl, ideally fitted with a flex edge beater head, cream the butter and the sugars until creamy;
- Add the egg, the yolk, and the vanilla extract; beat well;
- Add the flour and the salt; continue to stir until well combined;Refrigerate for 15-20 minutes;
- Preheat the oven, 170-180°C
- Onto a baking tray, drop tablespoons of the cookie dough: Be sure to leave room for spreading while baking;
- Bake for 10-12 minutes until softly golden;
- Cool for 2 minutes on the baking tray;
- Finally, cool on a cooling grid;
