The skate wing only needs a few aromatic herbs to reveal its delicate but intense flavor, served with a green rosti and a few green vegetables for a well-balanced dish.

Ingredients

  • 300 g Skate Wing
  • 250 g Flat cabbage
  • 250 g Savoy cabbage
  • 1 Shallot
  • 1 Egg
  • Chives
  • Parsley
  • Basil
  • Thyme sprig
  • Ground pepper
  • 6 Cherry tomatoes on vine
  • 1 Lime

Instructions

  • Finely chop the savoy cabbage;
  • Finely chop the green cabbage;
  • Mince the shallot;
  • Chisel the chives, parsley, and thyme;
  • In a large saucepan, boil lightly salted water and blanch the savoy cabbage for 3 minutes;
  • Add in the green cabbage and continue to blanch for 5 minutes;
  • Drain well;
  • In a large bowl, whisk one egg; season with ground pepper;
  • Add the cabbages, the herbs, and the minced shallot;
  • Combine well;
  • Preheat the oven at 180°C
  • In a frying pan, heat a tablespoon of olive oil and shape two rostis; I used stainless cookie cutters to obtain a perfectly-round rosti;
  • In an oven-proof dish, simply place the skate wing (dark skin side downward); season with ground pepper, thyme, and lime slices; pour a dash of lime juice;
    Put some cherry tomatoes on the branch next to it.
    Bake for 15-20 minutes;
  • When the rosti begins to set, remove the cookie cutter and turn upside down; Cook on low heat until lightly golden;
  • Remove the fish skin;
    Arrange rosti and skate wing on a plate;
    Enjoy!
