Ingredients
- 300 g Skate Wing
- 250 g Flat cabbage
- 250 g Savoy cabbage
- 1 Shallot
- 1 Egg
- Chives
- Parsley
- Basil
- Thyme sprig
- Ground pepper
- 6 Cherry tomatoes on vine
- 1 Lime
Instructions
- Finely chop the savoy cabbage;
- Finely chop the green cabbage;
- Mince the shallot;
- Chisel the chives, parsley, and thyme;
- In a large saucepan, boil lightly salted water and blanch the savoy cabbage for 3 minutes;
- Add in the green cabbage and continue to blanch for 5 minutes;
- Drain well;
- In a large bowl, whisk one egg; season with ground pepper;
- Add the cabbages, the herbs, and the minced shallot;
- Combine well;
- Preheat the oven at 180°C
- In a frying pan, heat a tablespoon of olive oil and shape two rostis; I used stainless cookie cutters to obtain a perfectly-round rosti;
- In an oven-proof dish, simply place the skate wing (dark skin side downward); season with ground pepper, thyme, and lime slices; pour a dash of lime juice;Put some cherry tomatoes on the branch next to it.Bake for 15-20 minutes;
- When the rosti begins to set, remove the cookie cutter and turn upside down; Cook on low heat until lightly golden;
- Remove the fish skin;Arrange rosti and skate wing on a plate;Enjoy!I simply roasted some asparagus tips to accompany;
