Ingredients
- 250 g Potatoes
- 2 Tomatoes
- 3 slices Raw Ham
- 50 gr Grated Cheese
- 3 Eggs
- 1 Red Onion
- Parsley
- Chives
- 1 tbsp Olive Oil
- Pepper & Salt
Instructions
- Peel and dice the potatoes, the tomatoes and the onion;Mince the herbs;
- In a frying pan, heat a tablespoon of olive oil and quickly roast the potato dices;
- Reduce heat and add the onion; let it gently sweat for 15/20 minutes;
- Add the tomato dices;
- In a bowl, whisk the eggs; season with salt and pepper;
- Pour the eggs in the frying pan; add the herbs;
- Continue to heat until eggs begin to set;
- Slide the frittata from the frying pan onto a baking tray (You can use a greaseproof baking paper);
- Bake for 10/15 minutes until lightly grilled;
- Enjoy!
