Ingredients

  • 80 g Kale
  • 50 g Snow Peas
  • 1 Baby Zucchini
  • 100 g Pasta
  • 6 Cherry tomatoes
  • 1 shallot
  • 500 ml Vegetable Stock
  • Chives
  • Parsley
  • Pepper

Instructions

  • Tear off Kale leaves from the stem;
    Tear them into medium-size pieces; Quickly rinse;
  • Cut the Zucchini into spaghetti-shaped stripes;
  • Rinse the snow peas; Trim edges and cut them in halves or third;
  • In a frying pan, heat a tablespoon of Extra Virgin Olive Oil; Quickly roast the snow peas and shallot;
  • Cook the pasta according to the pasta package directions; drain and reserve;
  • Pour the vegetable stock; add the Zucchini; continue to heat for 3-4 minutes;
  • Add the Kale and cherry tomatoes cut in halves; Cook for 5 minutes;
  • Add the pasta, chives and, parsley; stir in;
  • Enjoy!
