Ingredients
- 220 g Salmon
- 350 g Zucchini
- 240 g Puff pastry
- 1 Shallot
- 80 g Fresh cream
- 40 g Grated cheese
- 2 tbsp Dill finely chopped
- Ground pepper
- 2 pinch Salt
- 1 tbsp Extra virgin olive oil
Instructions
- Wash the zucchini; slice into 5-6mm thick (1/4-inch);
- Place slices onto a baking tray; brush with olive oil; sprinkle lightly with raw salt;Put in the oven; bake for 10-15 minutes;
- Finely chop the shallot;
- Finely chop (or tear up) the dill;
- When the zucchini has sweated well and become translucent, turn upside down and continue to bake for 10 minutes;
- Slice the salmon into even pieces of 5-6mm thick (1/4-inch);
- Preheat the oven, 210°C (410°F, 6);
- Fold the edges of the puff pastry inward and pinch to raise a 1cm (3/8-inch) edge;
- I choose individual puff pastry square; do the same for a bigger one to share;
- In a bowl, whisk an egg;
- Beat in the fresh cream; add in the herbs;
- Brush the puff pastry with some of the egg mixture;
- Bake for 10 minutes until the puff pastry has risen;Turn down the oven temperature to 180°C;
- With the edge of a tablespoon, mark the puff pastry along the inside edge; then push down the puff pastry center;
- Spoon onto the pastry the rest of the egg mixture; Arrange the zucchini and the salmon; be imaginative!
- Sprinkle with grated cheese, shallot, and aromatics herbs; season lightly with ground pepper;
- Bake for 15-20 minutes until well golden;Enjoy!
